Reset: Veggie Soup Recipe
Here’s a clean soup that you can make to add to your reset. It’s gluten free, dairy free, packed with veggies, made with broth and easy to make.
Ingredients:
1 tablespoon olive oil
1 onion, chopped
2 carrots, peeled and chopped
2 celery stalks, chopped
2 cloves garlic, minced
6 cups Hale Bone Broth (heated)
1 can diced tomatoes
1 cup chopped mixed vegetables (of your choice)
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Heat the olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery. Cook for about 5 minutes until the vegetables start to soften.
Add the minced garlic and cook for another 1 minute.
Pour in the broth and diced tomatoes (with their juices). Bring to a boil.
Reduce the heat to simmer and add the mixed vegetables and dried thyme. Let the soup cook for about 15-20 minutes until the vegetables are tender.
Season with salt and pepper to taste and garnish with fresh parsley.
