Reset: Veggie Soup Recipe

Here’s a clean soup that you can make to add to your reset. It’s gluten free, dairy free, packed with veggies, made with broth and easy to make. 

Ingredients:

  • 1 tablespoon olive oil

  • 1 onion, chopped

  • 2 carrots, peeled and chopped

  • 2 celery stalks, chopped

  • 2 cloves garlic, minced

  • 6 cups Hale Bone Broth (heated)

  • 1 can diced tomatoes

  • 1 cup chopped mixed vegetables (of your choice)

  • 1 teaspoon dried thyme

  • Salt and pepper to taste

  • Fresh parsley for garnish

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery. Cook for about 5 minutes until the vegetables start to soften.

  2. Add the minced garlic and cook for another 1 minute.

  3. Pour in the broth and diced tomatoes (with their juices). Bring to a boil.

  4. Reduce the heat to simmer and add the mixed vegetables and dried thyme. Let the soup cook for about 15-20 minutes until the vegetables are tender.

  5. Season with salt and pepper to taste and garnish with fresh parsley.
